Crock Pot Virgin

My crock pot cherry was popped today!  I decided to venture into this relatively unused, but extremely useful piece of kitchen equipment and attempt to make dinner.  Why my mother (or anyone else for that matter) never informed me of the crock pot before now is beyond me.  Here, ladies and gentlemen, is your own personal chef: all you have to do is buy the ingredients, put in ingredients, turn on, and wait--it doesn't get any easier than that!  It's amazing!!  And for those of you who think I'm overreacting, obviously you've never seen my many kitchen mishaps, especially involving any type of raw meat!  I am in love, and I don't care how much you make fun of me for it!

This isn't really fashion related, but since I worked from home today, and wore just a simple t and jeans, this is more exciting!  I decided to make 'Mexican Chicken', a recipe I found on another blog, Eat on the Run (http://eatontherun.wordpress.com/)--check it out, great blog!  Here's how simple it is:

--2 large, boneless, skinless chicken breasts
--Can of black beans (drained and rinsed)
--Can of diced tomatoes (do NOT drain)
--Jar of salsa verde (my change to the recipe, originally called for green enchilada sauce, but store was out)
--2 tsp of Chipotle seasoning (I used Cajun seasoning, and honestly, you can't really even taste it!)

Combine everything into pot, cook on low for 6 hours.  Enjoy with any Mexican toppings (Georgette and I used rice, salsa, Mexican cheese and sour cream).


Delicious, and plenty for leftovers!!



And here's an update from yesterday's clothing pick: nothing special (like I said, I worked from home, and didn't feel like wasting a good outfit while coding data!)  I bought this shirt while living in NY, and it's always been one of my favorites.

   
It also reminds me of the song 'This City' by Patrick Stump ft. Lupe Fiasco!  I love this song, cause it doesn't really matter where you're from, it still has meaning, and it always brings me back to the place I grew up!  It's also a great running song ( I have plenty, and will probably talk about them a lot!)
